Barbecued chicken with Greek salad

Full of Mediterranean flavours, this easy dish is perfect for a relaxed Sunday barbie.

Time  27 mins

Ingredients (serves 4) 
  • 2 tablespoons low-fat yoghurt
  • 1 lemon, juiced
  • 1 tablespoon Greek seasoning
  • 2 tablespoons mint leaves, finely chopped
  • 500g chicken tenderloins, tendons removed, trimmed
  • olive oil cooking spray
  • 100g baby spinach
  • 100g roasted capsicum, sliced
  • 1 Lebanese cucumber, roughly chopped
  • 50g snow pea sprouts
  • 75g low-fat feta cheese, crumbled
  • 1/2 cup kalamata olives in brine
  Method
  1. Place yoghurt, 2 teaspoons lemon juice, Greek seasoning and mint in a bowl. Mix well. Add chicken and turn to coat. Cover and refrigerate for 20 minutes.

  2. Preheat a barbecue grill on mediumlow heat. Remove chicken from marinade and spray lightly with oil. Barbecue for 2 to 3 minutes each side or until just cooked through.

  3. Meanwhile, place spinach, capsicum, cucumber, sprouts, feta and olives in a bowl. Toss to combine. Divide salad among plates. Top with chicken. Drizzle with remaining 2 1/2 tablespoons lemon juice. Season with pepper. Serve.



 

Mini pizza supremes

Ingredients (serves 4)
  • 4 x 15cm mini pizza bases
  • 1/4 cup tomato and herb pizza paste
  • 70g shaved reduced-fat ham, chopped
  • 225g can pineapple pieces, drained
  • 1/2 small red capsicum, chopped
  • 1/2 small green capsicum, chopped
  • 80g button mushrooms, sliced
  • 3/4 cup grated reduced-fat pizza cheese
  Method
  1. Preheat oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper. Place pizza bases on trays. Spread bases with tomato paste. Top with ham, pineapple, capsicum and mushrooms. Sprinkle with cheese.

  2. Bake for 20 minutes, swapping trays halfway through cooking, or until cheese is melted and bases are crisp. Serve.

Nutella Puffs

Ingredients ( serves 18)

  • 2 sheets of puff pastry
  • small jar of nutella
  • 3 table spoons of casting sugar
  • 1 egg or 1/4 milk
Method
1. Grab one sheet of puff pastry and cut in to 9 even square then repeat the same on the other sheet of pastry.

2.Now take the small squares and place a small teaspoon of nutella on the sheet of pastry.

3.Then fold over, grab a fork then push down around the shape too stick the pastry on both side together.
 
4. Lay on to tray , whisk egg with fork or pure milk into a cup using a pastry brush gently paste the egg or milk onto the top of the pastry.

5.Put pastry's into oven for around 20 mins cook till golden brown, when finsh wait 5min until cool then lay on a plate and add casting surger.
